Observations & Corrective Actions
4-2B: .05(7)(a)1 Observed drawer full of clean utensils with old food debris left in the bottom of the drawer. PIC moved entire drawer to ware wash area. Equipment food-contact surfaces must be cleaned at appropiate times and often enough to preclude an accumulation of debris buildup.
6-1B: .04(6)(f) Observed chili hot holding at a temperature below 135°F. (See temp log) PIC reheated chili. Time/temperature control for safety food shall be maintained at 135°F (57°C) or above.
12B: .03(5)(f) Observed PIC wearing artificial nails and nail polish with no gloves. PIC will wear gloves. Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food.
12B: .03(5)(g) Observed PIC with a stone ring on in the beginning of the inspection. PIC removed ring. Food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food (except for a plain ring such as a wedding band).
